Sovrana di Bufala
Made with pasteurized cow’s milk and 10% water buffalo milk from the Lombardy region of northern Italy. It is an 80# wheel, similar in size and shape as Parmesan Reggiano, aged a minimum of 2 years. The water buffalo milk adds a bit of sourness on the finish. It can be grated over pasta or risotto. Use it like parmesan for an additional flavor layer in any dish.
