Castelinhos cheese is a pasteurized cow’s milk cheese from the island of Terceira, in Azores, Portugal, following a traditional recipe that dates back to the last century. Castelinhos, which means small castle, takes its name from the castle of San Sebastián in the city of Angra, a world heritage site. With a soft and creamy texture, this hard to find cheese is a worthy addition to any cheese board.
